Even though the weather isn't ideal we've been able to collect about 60 gallons of sap with the neighbors--enough for the first boiling of the year. They've set up an old bulk tank to boil the sap down with room for the wood fire underneath.
They'll tend it all day long and even into the night until the volume is so low there is danger of it scorching over the fire as the syrup thickens.
At that point we bring it into our kitchens to finish on the stove.
It feels like we are distilling these sunny spring
days and pouring them into jars to enjoy all year long.
